  • ½ teaspoon Ground cinnamon
Crisp Topping
  • ¼ cup Old-fashioned or quick-cooking oats
  • ¼ cup All-purpose or whole-wheat flour
  • ¼ cup Packed light brown sugar
  • 2 tablespoons Cold unsalted butter, cut into small pieces

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C) and lightly coat an 8-inch square baking dish with nonstick spray.
  2. Toss the peeled, cored, thinly sliced apples with the lemon juice and cinnamon, then spread them evenly in the prepared baking dish.
  3. Combine the oats, flour, packed light brown sugar, and salt in a bowl. Add the cold butter and cut it in with a fork or pastry blender until coarse crumbs form.
  4. Sprinkle the topping evenly over the apples, covering the fruit from edge to edge.
  5. Bake for 30–35 minutes, or until the apples are tender and the topping is lightly browned.
  6. Let the crisp stand for 5–10 minutes before serving so the juices can settle slightly and the topping can firm up.

Notes

Use firm apples such as Granny Smith, Honeycrisp, Pink Lady, or a combination. For a crisper topping, refrigerate the assembled dish for 10–15 minutes before baking and do not cover it while it cooks.
