Easy Weeknight Spaghetti Bolognese

A quick American-Italian-style meat sauce made with ground beef, aromatic vegetables, crushed tomatoes, and herbs, then tossed with spaghetti for a cozy family dinner.

Ingredients
  

Sauce
  • 2 tablespoons Olive oil
  • 1 medium Medium yellow onion, finely diced
  • 1 medium Medium carrot, finely diced
  • 1 stalk Celery stalk, finely diced
  • 2-3 cloves Garlic cloves, minced
  • 1 pound (450 g) Ground beef, preferably 80-90% lean
  • 2 tablespoons Tomato paste
  • 1 28-ounce can (800 g) Crushed tomatoes
  • 1/2 cup (120 ml) Dry red wine or beef stock
  • 1/2 cup (120 ml) Water or additional beef stock
  • 1 teaspoon Dried Italian seasoning or dried oregano
  • 1 leaf Bay leaf, optional
  • 1 teaspoon, plus more to taste Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Pasta and Serving
  • 12 ounces (340 g) Spaghetti
  • As needed Grated Parmesan cheese
  • As needed Chopped fresh parsley or basil, optional

Method
 

Step-by-Step
  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the diced onion, carrot, and celery, then cook for 5 to 7 minutes until softened.
  2. Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Add the ground beef, break it up with a spoon, and cook for 6 to 8 minutes until browned; drain excess fat if necessary.
  3. Stir in the tomato paste and cook for 1 to 2 minutes. Pour in the wine or stock, scrape up browned bits from the pan, and simmer for 2 to 3 minutes.
  4. Add the crushed tomatoes, water or stock, Italian seasoning or oregano, bay leaf, salt, and black pepper. Bring the mixture to a gentle simmer.
  5. Partially cover and simmer the sauce for 25 to 35 minutes, stirring occasionally. Add a splash of water if it becomes too thick.
  6. Meanwhile, cook the spaghetti in generously salted boiling water according to the package directions, usually until al dente. Reserve about 1/2 cup of pasta water, then drain the spaghetti.
  7. Remove the bay leaf and toss the hot spaghetti with the sauce. Add a little reserved pasta water if needed to loosen the sauce and help it coat the noodles.
  8. Serve immediately with grated Parmesan and chopped fresh parsley or basil, if using. Offer extra Parmesan at the table for a savory finishing touch.

Notes

For deeper flavor, simmer the sauce for 45 to 60 minutes when time allows. Refrigerate leftovers in an airtight container and reheat gently with a splash of water or stock.
