Easy Weeknight Ramen Bowl

A quick homemade ramen bowl featuring soy-ginger broth, shredded chicken, ramen noodles, greens, mushrooms, and jammy eggs. It serves four and comes together in about 40 minutes.

Ingredients
  

Broth and Protein
  • 2 tablespoons Neutral oil, such as canola or avocado oil
  • 4 cloves Garlic, finely minced
  • 1 tablespoon Fresh ginger, finely grated
  • 6 cups Low-sodium chicken broth
  • 3 tablespoons Low-sodium soy sauce
  • 1 tablespoon White or yellow miso
  • 1 teaspoon Toasted sesame oil
  • 1 teaspoon Rice vinegar
  • 1 teaspoon Brown sugar
  • 2 cups Cooked shredded chicken
Noodles and Vegetables
  • 8 ounces Fresh ramen noodles
  • 4 3-ounce packages Or dried ramen noodles
  • 4 cups Chopped bok choy or baby spinach
  • 1 cup Sliced mushrooms, optional
Toppings
  • 4 eggs Large eggs
  • 3 green onions Green onions, thinly sliced
  • 1 sheet Nori, cut into strips, optional
  • as needed Toasted sesame seeds, optional
  • as needed Chili oil or chili crisp, optional

Method
 

Step-by-Step
  1. Bring a saucepan of water to a boil. Lower in the eggs and cook for 6 1/2 to 7 minutes for jammy centers, or 9 to 10 minutes for fully set yolks. Transfer the eggs immediately to an ice bath, peel them, and halve just before serving.
  2. Heat the neutral oil in a large pot over medium heat. Add the garlic and ginger and cook for about 30 seconds, just until fragrant. Add the chicken broth, soy sauce, miso, toasted sesame oil, rice vinegar, and brown sugar, then whisk until the miso dissolves.
  3. Bring the broth to a gentle simmer and cook for 8 to 10 minutes. If using mushrooms, add them during the last 3 to 4 minutes so they soften while retaining a pleasant bite.
  4. Add the ramen noodles to the simmering broth and cook according to the package directions, usually 2 to 4 minutes. Fresh noodles generally cook faster than dried noodles, so check them early.
  5. Stir in the bok choy or spinach and the shredded chicken. Cook for 1 to 2 minutes, until the greens wilt and the chicken is hot. Taste and adjust with additional soy sauce, rice vinegar, or chili oil.
  6. Divide the noodles, chicken, vegetables, and broth among four bowls. Top each bowl with half an egg, sliced green onions, sesame seeds, nori, and chili crisp as desired.

Notes

For leftovers, cook the noodles separately whenever possible and add them to bowls before ladling over hot broth. Add miso after reducing the heat, or whisk it with a little hot broth first. Peeled jammy eggs can be refrigerated in a covered container for about 2 days.
