Colorful flour tortilla pinwheels filled with ranch-seasoned cream cheese and finely chopped vegetables. This no-cook appetizer makes approximately 24 to 32 slices and is ideal for parties, lunchboxes, and make-ahead snacking.

Ingredients
  

Creamy Filling
  • 8 ounces (225 g) Cream cheese, softened
  • 1/2 cup Sour cream
  • 1 packet, about 1 ounce (28 g) Dry ranch-seasoning mix
Tortillas and Vegetables
  • 4 tortillas Large flour tortillas, preferably 10-inch
  • 1 cup Finely chopped broccoli
  • 1/2 cup Finely chopped red bell pepper
  • 1/2 cup Finely shredded carrots
  • 1/2 cup Finely chopped baby spinach

Method
 

Step-by-Step
  1. Let the cream cheese soften at room temperature so it spreads easily. In a bowl, beat or stir the cream cheese, sour cream, and dry ranch-seasoning mix until smooth and evenly combined.
  2. Spread the cream-cheese mixture evenly over each large flour tortilla, leaving a narrow border around the edges. Distribute the finely chopped broccoli, red bell pepper, shredded carrots, and baby spinach evenly over the creamy layer.
  3. Roll each tortilla tightly into a log, keeping the filling tucked inside as you roll. Wrap each log in plastic wrap and refrigerate for at least 1 hour so the filling firms and the pinwheels hold their shape.
  4. Trim the ends if desired, then use a sharp serrated knife to cut each roll into slices about 3/4 to 1 inch thick. Wipe the knife blade between cuts for cleaner, more uniform pieces, then arrange the pinwheels on a platter.

Notes

Finely chop or shred the vegetables so the tortillas roll easily and the filling stays in place. Pat wet vegetables dry before adding them to help prevent soggy tortillas. Optional additions include shredded cheddar, sliced olives, cucumber, or green onions.
