Easy Vegetarian Taco Casserole

A layered vegetarian taco casserole with seasoned beans, corn, tomatoes, salsa, tortilla chips, and melted cheese. It is an easy dinner that makes 6–8 generous servings.

  • 1 tablespoon Olive oil
  • 1 small Small yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 15-ounce can Black beans, drained and rinsed
  • 1 15-ounce can Pinto beans or vegetarian refried beans
  • 1 15-ounce can or 1 1/2 cups Corn, drained, or frozen corn, thawed
  • 1 10-ounce can Diced tomatoes with green chiles, undrained
  • 1 cup Chunky salsa
  • 1 1-ounce packet Taco seasoning
  • 1/4 cup Water, if using dry taco seasoning
  • 4 cups or 8 cups or tortillas Tortilla chips, lightly crushed, or small corn tortillas cut into strips
  • 1 1/2 cups Shredded Mexican blend cheese or cheddar cheese
Optional Add-Ins
  • 1/2 cup Sliced black olives
  • 2 green onions Green onions, sliced
For Serving
  • As desired Sour cream or plain Greek yogurt
  • As desired Diced avocado
  • As desired Fresh cilantro
  • As desired Lime wedges
  • As desired Additional salsa

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 4–5 minutes, until softened, then add the minced garlic and cook for 30 seconds.
  3. Stir in the black beans, pinto beans or vegetarian refried beans, corn, diced tomatoes with green chiles, salsa, taco seasoning, and water if needed.
  4. Simmer the filling for 5–7 minutes, stirring occasionally. If using refried beans, continue stirring until the mixture is evenly combined.
  5. Spread half of the tortilla chips or tortilla strips in the prepared baking dish. Spoon half of the bean mixture over the chips and sprinkle with about half of the cheese.
  6. Repeat the layers with the remaining chips, bean mixture, and cheese. Scatter the sliced black olives over the top if using.
  7. Cover the dish loosely with foil and bake for 15 minutes. Remove the foil and bake for another 10–15 minutes, until hot and bubbling and the cheese is melted.
  8. Let the casserole rest for 5–10 minutes before serving. Garnish with green onions, cilantro, avocado, or other desired toppings.

Notes

Drain watery salsa or tomatoes if the filling seems loose, since excess liquid can make the casserole soggy. For the best texture, keep tortilla chips in the layers rather than mixing them completely into the filling. The casserole can also be made with corn tortillas for a softer, enchilada-style texture.
