Easy Vegetarian Ramen with Rich Savory Broth

A quick vegetarian ramen with browned shiitakes, miso, ginger, garlic, tender bok choy, corn, and springy noodles. Optional jammy eggs and chili crisp make each bowl extra satisfying.

Ingredients
  

Broth
  • 1 tablespoon Neutral oil
  • 8 ounces Shiitake mushrooms, stems removed and caps sliced
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, finely grated
  • 6 cups Low-sodium vegetable broth
  • 2 tablespoons White or yellow miso
  • 2 tablespoons Soy sauce or tamari
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Toasted sesame oil
  • 1-2 teaspoons Maple syrup or brown sugar, optional
  • 1 4-inch sheet Kombu, optional
Ramen
  • 8-10 ounces Fresh or dried ramen noodles
  • 4 baby bok choy Baby bok choy, halved
  • 1 cup Corn kernels, fresh or frozen
  • 4 eggs Large eggs, optional
  • 3-4 scallions Scallions, thinly sliced
Optional Toppings
  • as needed Chili crisp or chili oil
  • as desired Toasted sesame seeds, nori strips, bean sprouts, sliced jalapeño, or additional mushrooms

Method
 

Step-by-Step
  1. If using eggs, bring a saucepan of water to a boil. Add the eggs and cook for about 6½ minutes for jammy yolks or 8–9 minutes for firmer yolks, then transfer them to ice water, peel, and halve.
  2. Heat the neutral oil in a large pot over medium-high heat. Add the sliced shiitakes and cook for 4–6 minutes, stirring occasionally, until browned and softened.
  3. Add the minced garlic and grated ginger to the mushrooms. Cook for 30–60 seconds, just until fragrant and not browned.
  4. Pour in the vegetable broth and add the kombu if using. Bring the mixture to a gentle simmer and cook for 8–10 minutes, then remove the kombu.
  5. Stir the miso, soy sauce, rice vinegar, sesame oil, and optional maple syrup or brown sugar into the broth. Do not let the soup boil vigorously after adding the miso.
  6. Add the bok choy and corn and simmer for 2–3 minutes, until the greens are tender but still bright and the corn is heated through.
  7. Cook the ramen noodles according to the package directions, usually for 2–4 minutes. For a cleaner broth, cook them separately, drain well, and divide them among four bowls.
  8. Ladle the hot broth, mushrooms, bok choy, and corn over the noodles. Top each bowl with a halved egg, scallions, and any desired garnishes.

Notes

Brown the shiitakes before adding broth for deeper flavor. Dissolve miso in a small ladleful of hot broth before stirring it into the pot. Store noodles separately from broth when preparing leftovers, because noodles continue absorbing liquid.
