- Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package directions, usually 1–2 minutes less than the full cooking time, so they remain firm enough to roll.
- Drain the noodles and arrange them flat on a lightly oiled baking sheet or parchment paper to prevent sticking and tearing.
- Combine the ricotta, squeezed-dry spinach, egg, 1 cup mozzarella, Parmesan, garlic, Italian seasoning, kosher salt, and black pepper in a mixing bowl. Stir in red-pepper flakes if desired.
- Spread about 1 1/2–2 cups marinara sauce over the bottom of the prepared baking dish.
- Spread approximately 1/3 cup of the ricotta mixture evenly over each noodle, leaving a small uncovered strip at one end.
- Roll each noodle firmly from one short end to the other. Place each roll seam-side down in the baking dish.
- Spoon the remaining marinara sauce over the roll-ups and sprinkle with the remaining 1 cup mozzarella.
- Cover the baking dish tightly with foil and bake for 20–25 minutes. Remove the foil and bake for another 10–15 minutes, until the sauce bubbles and the cheese melts and lightly browns.
- Let the lasagna roll-ups rest for 5–10 minutes before serving. Finish with fresh basil or parsley if desired.
Notes
Squeeze the thawed spinach very dry to prevent a watery filling. Slightly undercook the noodles and keep them flat after draining. Roll-ups may be assembled up to 24 hours ahead, covered, refrigerated, and baked when needed; add roughly 5–10 minutes to the covered baking time when baking directly from the refrigerator.
