Easy Valentine's Jello Parfait Recipe

Layer strawberry or cherry gelatin with fresh strawberries and fluffy whipped topping for six colorful, make-ahead Valentine’s desserts.

Ingredients
  

Gelatin Layer
  • 2 packages, 3 oz/85 g each Strawberry or cherry gelatin dessert
  • 2 cups Boiling water
  • 2 cups Cold water
Layers
  • 1 8 oz/226 g container Frozen whipped topping, thawed
  • 1–1 1/2 cups Fresh strawberries, hulled and diced
Optional Garnish
  • As desired Extra whipped topping, whole strawberries, or red/pink sprinkles

Method
 

Step-by-Step
  1. Place both packages of gelatin powder in a large bowl. Add the boiling water and whisk for about 2 minutes, or until every crystal has completely dissolved.
  2. Stir in the cold water until the mixture is evenly combined. Refrigerate for about 30–45 minutes, watching carefully so it thickens slightly while remaining spoonable rather than fully firm.
  3. Spoon a layer of thickened gelatin into six small parfait glasses or clear dessert cups. Add a layer of diced strawberries followed by a layer of whipped topping.
  4. Repeat the gelatin, strawberry, and whipped topping layers until the cups are filled, finishing each parfait with whipped topping. Refrigerate for at least 2 hours, until fully set and well chilled.
  5. Before serving, garnish each parfait with a whole strawberry, a small swirl of whipped topping, or Valentine’s sprinkles. Serve cold with long dessert spoons so guests can enjoy every colorful layer.

Notes

For the clearest layers, chill the gelatin until slightly thick but still easy to spoon. Clear cups and chilled glasses show the red, white, and berry colors beautifully. The gelatin may be purchased as one 6 oz/170 g package instead of two 3 oz packages.
