- Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish. Cook the spaghetti or linguine in salted water until just shy of al dente, then drain well.
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add the mushrooms and onion, sauté for 5–7 minutes, then stir in the garlic and cook for 30 seconds.
- Add the remaining 2 tablespoons of butter. Stir in the flour and cook for about 1 minute, stirring constantly.
- Gradually whisk in the broth and cream or whole milk. Cook for 3–5 minutes, stirring often, until the sauce thickens, then season with kosher salt and black pepper.
- Stir the turkey, peas, 1/4 cup Parmesan, and cooked pasta into the sauce. Mix gently until the pasta is evenly coated.
- Transfer the mixture to the greased baking dish. Sprinkle with mozzarella, the remaining Parmesan, and breadcrumbs.
- Bake uncovered at 350°F for 25–30 minutes, until hot and bubbling. Broil briefly at the end if you want a more deeply browned topping.
- Rest the casserole for 5–10 minutes before serving. This gives the creamy sauce time to settle around the pasta.
Notes
Cook the pasta slightly under al dente because it continues cooking in the oven. If the assembled mixture looks dry before baking, stir in a splash of broth or milk. Refrigerate leftovers promptly and reheat gently with a little broth or milk.
