Easy Turkey Broccoli Alfredo Quesadillas

  • 4 Large flour tortillas, approximately 8 inches
  • 2 cups Cooked turkey, chopped or shredded
  • 1 cup Cooked broccoli florets, chopped
  • 1/2 cup Prepared Alfredo sauce
  • 1 cup Shredded mozzarella or Italian-blend cheese
  • 2 tablespoons Grated Parmesan cheese
  • 1 tablespoon Butter or olive oil, for the skillet
Seasoning
  • 1/4 teaspoon Garlic powder, optional
  • to taste Salt and black pepper

Method
 

Step-by-Step
  1. If using fresh broccoli, steam or blanch it until tender-crisp, then drain well and chop it. If using thawed frozen broccoli, squeeze or drain it thoroughly to remove excess water.
  2. Combine the turkey, broccoli, Alfredo sauce, mozzarella, Parmesan, and optional garlic powder in a bowl. Season lightly with salt and black pepper, keeping in mind that Alfredo sauce and Parmesan may already be salty.
  3. Spread the filling over half of each tortilla, leaving a small border around the edge. Fold each tortilla over to create a half-moon quesadilla without overfilling it.
  4. Heat a large skillet or griddle over medium heat and add a small amount of butter or olive oil. Cook the quesadillas in batches for approximately 2–3 minutes per side, turning once, until golden brown and the cheese is melted.
  5. Add more butter or oil as needed for the remaining quesadillas. Let the cooked quesadillas stand for 1–2 minutes, then cut them into wedges and serve warm.

Notes

Drain broccoli very well and avoid overfilling the tortillas so they brown properly and are easier to flip. Medium heat allows the tortilla to crisp while the turkey warms and the cheese melts without burning. Serve with extra Alfredo sauce, ranch dressing, or a green salad.
