  1. Wash and dice the tomatoes into bite-size pieces. If they are especially juicy, drain away some excess liquid so the finished salad stays fresh rather than watery.
  2. Halve the avocado lengthwise, remove the pit, and peel away the skin. Cut the flesh into bite-size pieces, keeping the cuts neat so the avocado holds its shape.
  3. Thinly slice or finely dice the red onion, then chop the fresh cilantro. Prepare these ingredients before dressing the salad so assembly is quick and gentle.
  4. Whisk the extra-virgin olive oil, juice of one lime, salt, and freshly ground black pepper in a small bowl. Continue whisking until the dressing looks evenly combined.
  5. Place the tomatoes, avocado, red onion, and cilantro in a serving bowl. Pour the dressing over the top, distributing it across the ingredients.
  6. Gently toss the salad just until everything is lightly coated, taking care not to mash the avocado. Serve immediately or chill briefly before serving.

Notes

For the best texture, use tomatoes that are ripe but still firm and an avocado that yields slightly to gentle pressure. Add the avocado and dressing shortly before serving because early mixing can soften the avocado and cause the tomatoes to release extra liquid.
