- Heat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Combine the ground chicken, panko, egg, garlic, ginger, green onions, sesame oil, salt, and pepper. Mix just until combined.
- Shape the mixture into 18–22 meatballs, approximately 1 1/2 inches (4 cm) wide, and arrange them with space between each one.
- Bake for 15–18 minutes, or until the centers reach 165°F (74°C) on an instant-read thermometer.
- While the meatballs bake, whisk the soy sauce, water, brown sugar, rice vinegar, cornstarch, sesame oil, garlic, and ginger in a small saucepan.
- Bring the sauce to a gentle simmer over medium heat, whisking frequently. Cook for 3–5 minutes, until glossy and thick enough to coat a spoon.
- Add the cooked meatballs to the sauce and gently toss until coated. Garnish with sesame seeds and sliced green onions, then serve with cooked rice or noodles.
Notes
Mix the chicken mixture gently so the meatballs stay tender. Use an instant-read thermometer to confirm that ground chicken reaches 165°F (74°C). Low-sodium soy sauce is preferable because the sauce becomes more concentrated as it thickens.
