Easy Tater Tot Breakfast Casserole

A filling breakfast casserole layered with sausage, onion, seasoned eggs, Cheddar cheese, and frozen tater tots. It bakes into a bubbly, golden dish that serves a crowd.

Ingredients
  

Sausage Layer
  • 1 pound Breakfast sausage, pork or turkey
  • 1 small Small onion, diced
Egg Mixture
  • 8 eggs Large eggs
  • 1 cup Whole milk or evaporated milk
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
Layers
  • 2 cups Shredded sharp Cheddar cheese, divided
  • 1 bag, about 30–32 ounces Frozen tater tots
Optional Add-Ins
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Paprika
  • 1/2 cup Diced bell pepper

Method
 

Step-by-Step
  1. Heat the oven to 350°F and grease a 9 x 13-inch baking dish.
  2. Cook the sausage and diced onion in a skillet over medium heat for about 7–10 minutes, breaking the sausage into crumbles as it browns. Drain excess grease thoroughly.
  3. Spread the cooked sausage mixture evenly in the prepared baking dish, then sprinkle 1 cup of the shredded Cheddar over it.
  4. Whisk the eggs, milk, salt, pepper, and any optional seasonings together in a bowl. Pour the mixture evenly over the sausage and cheese.
  5. Arrange the frozen tater tots in a single layer over the casserole. Sprinkle the remaining 1 cup of cheese over the tots.
  6. Bake uncovered for 50–60 minutes, until the eggs are set in the center, the tater tots are hot and crisp, and the internal temperature reaches about 160°F.
  7. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

Do not thaw the tater tots before baking. For a make-ahead casserole, cover and refrigerate it overnight, let it sit at room temperature for about 20–30 minutes before baking, and add approximately 10–15 minutes to the baking time if it is still cold.
