- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and bell pepper, then cook for 5–7 minutes until softened.
- Add the minced garlic, chili powder, cumin, smoked paprika, oregano, kosher salt, and black pepper. Stir for about 30 seconds, just until the spices and garlic become fragrant.
- Add the cubed sweet potato, tomatoes with their juices, drained beans, and 3 cups of vegetable broth. Stir well to combine.
- Bring the chili to a boil, reduce the heat to low, partially cover the pot, and simmer for 30–40 minutes. Stir occasionally until the sweet potato is fork-tender.
- Add more broth if the chili becomes too thick. Stir in the lime juice or cider vinegar, taste, and adjust the salt and spices before serving hot.
Notes
Cut the sweet potato into even 1/2-inch cubes so it cooks at the same rate. For thicker chili, mash some beans and sweet potato against the side of the pot or simmer uncovered for the final 5–10 minutes.
