Easy Succotash with Green Beans

A colorful skillet succotash combining sweet corn, creamy lima beans, tender-crisp green beans, peppers, onion, garlic, and optional cherry tomatoes. It is an easy vegetable side dish for weeknight dinners, cookouts, and holiday tables.

  • 2 tablespoons Unsalted butter or olive oil
  • 1 small Small yellow onion, finely chopped
  • 1 small Small red bell pepper, diced
  • 2 cloves Garlic cloves, minced
  • 8 ounces Fresh green beans, trimmed and cut into 1-inch pieces
  • 1 1/2 cups Lima beans, thawed or used directly from frozen
  • 2 cups Corn kernels, fresh or frozen
  • 1/2 cup Cherry tomatoes, halved
Seasoning and Finish
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Water or low-sodium chicken or vegetable stock
  • 1 tablespoon Fresh parsley, chives, or basil, chopped

Method
 

Step-by-Step
  1. Heat the butter or olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the chopped onion and diced red bell pepper. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables soften without browning heavily.
  3. Add the minced garlic and cook for about 30 seconds, just until fragrant.
  4. Add the green beans, lima beans, water or stock, kosher salt, and black pepper. Cover and cook for 6 to 8 minutes, until the green beans are nearly tender.
  5. Stir in the corn and halved cherry tomatoes. Cook uncovered for another 4 to 6 minutes, stirring occasionally, until the vegetables are tender and most of the liquid has evaporated.
  6. Taste and adjust the salt and pepper. Stir in the chopped parsley, chives, or basil, then serve warm.

Notes

Add the corn later so it stays sweet and does not become tough or mushy. Stop cooking when the green beans are tender-crisp because they will soften slightly from residual heat. For a richer version, stir in 2 to 4 tablespoons of heavy cream or 1 tablespoon of extra butter at the end.
