- Spread about 2 tablespoons of softened cream cheese over each of four bread slices. Spread about 2 tablespoons of strawberry preserves over the cream cheese, then top with the remaining bread slices to form four sandwiches.
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until the custard is evenly combined.
- Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter. Dip each sandwich briefly into the egg mixture, turning to coat both sides without allowing the bread to soak for too long.
- Cook two sandwiches at a time for about 3–4 minutes per side. Add the remaining butter as needed, and cook until the bread is golden brown and the cream-cheese filling is hot.
- Dust the finished stuffed French toast with confectioners’ sugar. Serve warm with maple syrup and/or fresh berries.
Notes
Fully soften the cream cheese before spreading so the bread does not tear. Cook over medium heat rather than high heat, and chill assembled sandwiches for 10–15 minutes before dipping if you want especially neat edges.
