  • 1 pound Lean ground beef
  • 1 small Small yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 1 head Small green cabbage, chopped
  • 28 ounces Diced tomatoes with juices
  • 8 ounces Tomato sauce
  • 4 cups Beef broth
  • 1/2 cup Uncooked long-grain white rice
Seasonings
  • 1 tablespoon Brown sugar
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Method
 

Step-by-Step
  1. Heat a large soup pot or Dutch oven over medium heat. Add the lean ground beef and diced onion, then cook for 6–8 minutes, stirring and breaking up the beef, until browned and the onion is softened. Drain excess fat if necessary.
  2. Add the minced garlic and cook for about 30 seconds, stirring constantly so it becomes fragrant without browning too deeply.
  3. Stir in the chopped cabbage, diced tomatoes with their juices, tomato sauce, beef broth, uncooked rice, brown sugar, paprika, salt, and black pepper.
  4. Bring the soup to a boil, then reduce the heat to low. Partially cover the pot and simmer for 25–30 minutes, stirring occasionally, until the cabbage is tender and the rice is fully cooked.
  5. Taste the soup and adjust the salt and pepper as needed. Ladle it into bowls and serve hot, adding a little extra beef broth if the soup is thicker than desired.

Notes

The rice continues absorbing broth as the soup sits, so add a little extra beef broth when reheating. For more controlled leftovers, cook the rice separately and stir it into individual portions just before serving.
