Step-by-Step
- Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line the bottom with parchment paper if desired.
- Whisk the flour, sugar, baking soda, salt, and cinnamon together in a large bowl.
- In a separate bowl, whisk the lightly beaten eggs, vegetable oil, vanilla extract, and sour cream or plain buttermilk until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Toss the diced strawberries and optional nuts with 1 tablespoon of the flour, then gently fold them into the batter.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, until the center is set and a toothpick inserted in the middle comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for 15 to 20 minutes, then remove it and cool completely on a wire rack before slicing.
Notes
Pat the strawberries dry and dice them fairly small to prevent a dense loaf or wet streak through the center. Coat the berries and nuts with 1 tablespoon of flour before folding them in. Let the bread cool fully because the crumb continues to set as it cools.
