Easy Strawberry Bread Recipe

A moist, tender strawberry quick bread made with fresh diced berries, warm cinnamon, vanilla, and a choice of sour cream or plain buttermilk. This no-yeast loaf makes about 8 to 10 slices.

  • 2 cups (250 g) All-purpose flour
  • 1 cup (200 g) Granulated sugar
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 2 large Large eggs, lightly beaten
  • 1/2 cup (120 ml) Neutral vegetable oil
  • 1 teaspoon Vanilla extract
  • 1/2 cup (120 g) Sour cream or plain buttermilk
  • 1 1/2 cups Fresh strawberries, finely diced and patted dry
Optional Add-Ins
  • 1/2 cup Chopped pecans or walnuts

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line the bottom with parchment paper if desired.
  2. Whisk the flour, sugar, baking soda, salt, and cinnamon together in a large bowl.
  3. In a separate bowl, whisk the lightly beaten eggs, vegetable oil, vanilla extract, and sour cream or plain buttermilk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  5. Toss the diced strawberries and optional nuts with 1 tablespoon of the flour, then gently fold them into the batter.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50 to 60 minutes, until the center is set and a toothpick inserted in the middle comes out clean or with a few moist crumbs.
  8. Cool the loaf in the pan for 15 to 20 minutes, then remove it and cool completely on a wire rack before slicing.

Notes

Pat the strawberries dry and dice them fairly small to prevent a dense loaf or wet streak through the center. Coat the berries and nuts with 1 tablespoon of flour before folding them in. Let the bread cool fully because the crumb continues to set as it cools.
