Steak and Marinade
  • 1 pound Flank steak or sirloin steak
  • 2 tablespoons Vegetable or olive oil, divided
  • 2 tablespoons Fresh lime juice
  • 2 Garlic cloves, minced
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked or sweet paprika
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Vegetables
  • 12 ounces Fresh green beans, trimmed
  • 1 Medium bell pepper, thinly sliced
  • 1 Medium yellow onion, thinly sliced
Serving
  • 8 Small flour tortillas, warmed
  • As needed Sour cream
  • As needed Shredded Monterey Jack or cheddar cheese
  • As needed Salsa or pico de gallo
  • As needed Sliced avocado
  • As needed Fresh cilantro

Method
 

Step-by-Step
  1. Slice the steak thinly across the grain. Stir together the lime juice, garlic, chili powder, cumin, paprika, salt, pepper, and 1 tablespoon of the oil, then toss with the steak and let it stand for 15 to 30 minutes; refrigerate if marinating longer.
  2. Blanch the trimmed green beans in boiling salted water for 3 to 4 minutes, until bright green and barely tender. Drain and rinse briefly under cold water so they stop cooking while retaining their fresh texture.
  3. Heat a large cast-iron skillet or heavy frying pan over high heat. Add the remaining 1 tablespoon oil once the pan is hot.
  4. Cook the steak in a single layer, working in batches if necessary, for about 2 to 3 minutes per side or until browned and cooked to your desired doneness. Transfer the cooked steak to a plate.
  5. Add the sliced onion and bell pepper to the hot skillet. Cook for 3 to 5 minutes, stirring occasionally, until the vegetables have lightly charred edges while remaining slightly crisp.
  6. Add the blanched green beans and cook for 2 to 3 minutes more. Return the steak to the pan and toss everything together for about 1 minute, just until heated through.
  7. Serve the fajita mixture immediately in the 8 warmed flour tortillas. Add sour cream, shredded Monterey Jack or cheddar, salsa or pico de gallo, avocado, cilantro, and lime wedges as desired.

Notes

Slice steak across the grain and keep the skillet very hot for tender pieces and browned edges. Avoid crowding the pan; cook the steak in batches if needed. Blanching the green beans first helps them finish tender-crisp without overcooking the steak. Refrigerate leftovers in an airtight container for up to 3 days and reheat briefly in a hot skillet.
