Easy Spinach Artichoke Quiche Recipe

A creamy, cheesy quiche filled with spinach, artichoke hearts, mozzarella, and Parmesan in a crisp partially blind-baked crust. This recipe makes one 9-inch quiche with about 6–8 servings.

Ingredients
  

Crust
  • 1 9-inch crust Unbaked refrigerated or homemade pie crust
Filling
  • 1 tablespoon Olive oil or unsalted butter
  • 1/2 medium Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 5 ounces Fresh baby spinach
  • 14 ounces Artichoke hearts, drained and chopped
Custard
  • 5 eggs Large eggs
  • 1 cup Half-and-half
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Crushed red pepper flakes
Cheese
  • 1 cup Shredded mozzarella cheese
  • 1/2 cup Grated Parmesan cheese
Optional Richness
  • 2 ounces Cream cheese, softened

Method
 

Step-by-Step
  1. Heat the oven to 375°F. Fit the pie crust into a 9-inch pie plate, prick the bottom with a fork, cover it with parchment, and add pie weights or dried beans.
  2. Blind-bake the crust for 10 minutes. Remove the parchment and weights, then bake for another 3–5 minutes, until the surface looks dry but is not browned.
  3. Heat the oil or butter in a skillet over medium heat. Cook the onion for 3–4 minutes until softened, add the garlic, and cook for about 30 seconds.
  4. Add the fresh spinach and cook just until wilted. If using frozen spinach, thaw it and squeeze it very dry before adding it. Stir in the chopped artichokes and cook for 1–2 minutes, then remove the skillet from the heat.
  5. Whisk the eggs, half-and-half, salt, pepper, and optional red pepper flakes together. If using cream cheese, whisk or blend it into the custard until mostly smooth.
  6. Spread the spinach-artichoke mixture over the partially baked crust. Sprinkle the mozzarella and Parmesan over the vegetables, then pour the egg mixture over everything.
  7. Bake at 375°F for 35–45 minutes, until the edges are set and the center has a slight, gentle wobble. Cool the quiche for 10–15 minutes before slicing so the custard can finish setting.

Notes

For frozen spinach, use 10 ounces, thawed and squeezed very dry. Drain and pat marinated artichokes dry and reduce the added salt. Monterey Jack, Gruyère, Swiss, or cheddar may replace some or all of the mozzarella. Milk may replace the half-and-half, but the quiche will be slightly less rich.
