A hearty one-pot soup made with hot Italian sausage, tomatoes, white beans, zucchini, and leafy greens. It is ready in about 45–55 minutes and makes approximately 6 servings.

  • 1 pound (450 g) Bulk hot Italian sausage
  • 1 tablespoon Olive oil, only if sausage is lean
  • 1 medium Medium yellow onion, diced
  • 2 medium Carrots, peeled and sliced
  • 2 stalks Celery stalks, sliced
  • 3 cloves Garlic, minced
  • 1/2 teaspoon Crushed red-pepper flakes
  • 1 28-ounce can Diced tomatoes with juices
  • 6 cups (1.4 L) Chicken broth or low-sodium vegetable broth
  • 1 15-ounce can Cannellini or great northern beans, drained and rinsed
  • 2 medium Zucchini, halved lengthwise and sliced
Seasonings and Greens
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Black pepper
  • 2 cups Chopped kale or baby spinach

Method
 

Step-by-Step
  1. Heat a large Dutch oven or soup pot over medium-high heat. Add the sausage, using the olive oil only if the sausage is lean, and cook for 6–8 minutes while breaking it into small pieces until browned and no longer pink. Drain excess fat if necessary.
  2. Add the diced onion, sliced carrots, and celery to the browned sausage. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften and pick up the savory browned bits from the bottom of the pot.
  3. Stir in the minced garlic and crushed red-pepper flakes. Cook for about 30 seconds, just until the garlic is fragrant and the pepper flakes begin to perfume the pot.
  4. Add the diced tomatoes with their juices, broth, drained beans, Italian seasoning, kosher salt, and black pepper. Stir well, then bring the soup to a boil.
  5. Reduce the heat to maintain a gentle simmer, partially cover the pot, and cook for 15–20 minutes. The soup is ready for the next stage when the carrots and celery are tender when pierced with a fork.
  6. Add the sliced zucchini and simmer for 5–7 minutes more. This timing keeps the zucchini tender while helping it retain a pleasant shape and fresh flavor.
  7. Stir in the chopped kale or baby spinach during the final 1–2 minutes. Cook only until the greens are wilted, then taste and adjust the salt, pepper, and red-pepper flakes before serving hot.

Notes

Brown the sausage thoroughly for the best flavor, and add zucchini and greens near the end so they do not become mushy. Low-sodium broth is preferable because sausage and canned tomatoes may already contain considerable salt. Refrigerate leftovers promptly and reheat gently on the stovetop or in the microwave.
