Easy Spicy Jalapeño Pimento Cheese Recipe

A creamy, no-cook Southern cheese spread made with sharp cheddar, Monterey Jack or pepper Jack, pimentos, jalapeños, and full-fat mayonnaise. It makes about 3 cups and tastes even better after chilling.

Ingredients
  

Cheese and Creamy Base
  • 8 ounces (225 g) Sharp yellow cheddar, freshly grated
  • 4 ounces (115 g) Monterey Jack or pepper Jack cheese, freshly grated
  • 4 ounces (115 g) Cream cheese, softened
  • 1/2 cup Mayonnaise, preferably Duke’s or another full-fat mayonnaise
Vegetables and Seasonings
  • 1 jar (4 ounces/115 g) Diced pimentos, well drained
  • 2 jalapeños Fresh jalapeños, finely minced
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Onion powder
  • 1/4 teaspoon Smoked paprika
  • 1/4 teaspoon Kosher salt, plus more to taste
  • 1/4 teaspoon Freshly ground black pepper
Optional Savory Additions
  • 1-2 teaspoons Hot sauce
  • 1 teaspoon Worcestershire sauce

Method
 

Step-by-Step
  1. Let the cream cheese soften at room temperature. Drain the pimentos thoroughly and blot them with paper towels.
  2. Stir the softened cream cheese and mayonnaise together in a mixing bowl until mostly smooth.
  3. Mix in the garlic powder, onion powder, smoked paprika, kosher salt, black pepper, and optional hot sauce or Worcestershire sauce.
  4. Fold in the freshly grated cheddar, Monterey Jack or pepper Jack, drained pimentos, and minced jalapeños.
  5. Taste and adjust the salt and heat. Cover and refrigerate for at least 30 minutes before serving; the flavor improves after several hours.

Notes

Freshly grate the cheese for the creamiest texture, since pre-shredded cheese can contain anti-caking starches. Remove the jalapeño seeds and membranes for less heat, and keep the finished spread refrigerated.
