Easy Spam Fried Rice Recipe

  • 3 cups Cooked, chilled white rice, preferably day-old long-grain or jasmine rice
  • 1 12-ounce can Spam, cut into 1/4-inch cubes
  • 2 Large eggs
  • 1 cup Frozen peas and carrots, thawed or used directly from frozen
  • 1/2 Small yellow onion, finely diced
  • 2 Garlic cloves, minced
  • 2-3 Scallions, sliced, with some green tops reserved for garnish
  • 2 tablespoons Neutral cooking oil, divided
Seasonings
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce, optional
  • 1 teaspoon Toasted sesame oil
  • 1/4 teaspoon Ground white pepper or black pepper
Optional Add-Ins
  • 1 teaspoon Fresh ginger, grated
  • To taste Red-pepper flakes or chili oil

Method
 

Step-by-Step
  1. Break up the chilled rice with your hands or a fork until there are no large clumps. Beat the eggs in a small bowl and set all ingredients near the stove because the cooking moves quickly.
  2. Heat 1 tablespoon of neutral oil in a large wok or skillet over medium-high to high heat. Add the diced Spam and cook for 3-5 minutes, stirring occasionally, until browned and lightly crisp; transfer it to a plate.
  3. Add the remaining oil to the hot pan. Pour in the beaten eggs, stir until just set, and transfer them to the plate with the Spam so they stay tender.
  4. Add the diced onion and cook for about 1 minute. Stir in the garlic and grated ginger, if using, and cook for 20-30 seconds until fragrant without letting the garlic burn.
  5. Add the peas and carrots and cook for 1-2 minutes. If using the vegetables directly from frozen, give them an extra moment if needed so they become hot before the rice goes in.
  6. Add the chilled rice and toss vigorously for 3-4 minutes, pressing out any remaining clumps. Let the rice contact the hot pan so it fries and dries slightly instead of steaming.
  7. Return the browned Spam and cooked eggs to the pan. Add the soy sauce, optional oyster sauce, toasted sesame oil, and pepper, then toss for 1-2 minutes until everything is hot and evenly seasoned.
  8. Stir in the sliced scallions, reserving the green tops for garnish. Taste carefully before adding anything else, then serve the fried rice immediately with the reserved scallions scattered over the top.

Notes

Cold, preferably day-old rice gives the best texture. Spam is already salty, so taste before adding extra soy sauce. Cook over high heat and avoid overcrowding the pan so the rice fries rather than steams.
