Easy Spaghetti with Roasted Garlic and Oil

Tender spaghetti is tossed with sweet roasted garlic, extra-virgin olive oil, red pepper flakes, parsley, and optional Parmesan. It is a simple four-serving dinner with rich flavor and a silky finish.

Ingredients
  

Roasted Garlic
  • 1 large head Large head garlic
  • 2 tablespoons Extra-virgin olive oil
Pasta and Sauce
  • 12 ounces Spaghetti
  • 1/4 to 1/3 cup Extra-virgin olive oil
  • 1/2 teaspoon, or to taste Crushed red pepper flakes
  • 1/2 teaspoon, plus more for pasta water Kosher salt
  • 1/4 cup Fresh flat-leaf parsley, chopped
  • 1/2 cup, optional Finely grated Parmesan cheese
  • 1/2 to 1 cup Reserved pasta water

Method
 

Step-by-Step
  1. Heat the oven to 400°F. Slice about 1/4 inch from the top of the garlic head to expose the cloves, place it on foil, drizzle with 2 tablespoons olive oil, wrap tightly, and roast for 35–45 minutes until soft and golden.
  2. Cool the roasted garlic briefly, then squeeze the softened cloves from their skins and mash them into a paste. Bring a large pot of well-salted water to a boil and cook the spaghetti until al dente according to the package directions.
  3. Reserve at least 1 cup of the pasta water before draining the spaghetti. While the pasta cooks, warm 1/4 to 1/3 cup olive oil in a large skillet over medium-low heat.
  4. Add the roasted garlic paste and red pepper flakes to the skillet. Cook for 1–2 minutes, stirring until fragrant, and do not let the garlic or pepper burn.
  5. Add the drained spaghetti to the skillet and toss vigorously. Pour in reserved pasta water a few tablespoons at a time until the oil becomes lightly emulsified and coats the noodles.
  6. Stir in the parsley and season with the 1/2 teaspoon kosher salt, adding more if needed. Serve immediately with Parmesan, if desired.

Notes

Save more pasta water than you think you need because its starch helps create a smooth sauce. Keep the skillet over medium-low heat so the garlic and red pepper flakes do not burn. For a more traditional aglio e olio finish, use Parmesan sparingly or omit it.
