Easy Snickerdoodles Recipe (Soft & Chewy!)

These classic snickerdoodles have tender, chewy centers, lightly crisp edges, and a fragrant cinnamon-sugar coating. Cream of tartar provides their signature gentle tang and helps create the traditional texture.

Ingredients
  

Cookie Dough
  • 1 cup (226 g) Unsalted butter, softened
  • 1 1/2 cups (300 g) Granulated sugar
  • 2 eggs Large eggs, room temperature
  • 2 teaspoons Pure vanilla extract
  • 2 3/4 cups (345 g) All-purpose flour, spooned and leveled
  • 2 teaspoons Cream of tartar
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Fine salt
Cinnamon-Sugar Coating
  • 1/4 cup (50 g) Granulated sugar
  • 1 tablespoon Ground cinnamon

Method
 

Instructions
  1. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk the flour, cream of tartar, baking soda, and salt together in a medium bowl.
  3. Beat the softened butter and 1 1/2 cups granulated sugar for 2–3 minutes, until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Add the dry ingredients and mix only until a soft dough forms. Chill for 20–30 minutes if the dough is very soft or sticky.
  6. Stir the coating sugar and cinnamon together in a small bowl. Scoop approximately 1 1/2-inch portions, roll them into balls, and coat them in the cinnamon sugar.
  7. Place the balls about 2 inches apart on the prepared baking sheets and bake for 8–10 minutes, until the edges are set while the centers remain slightly soft and puffy.
  8. Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack.
