- Heat the oven to 350°F (175°C). Grease a 12-cup muffin pan or line it with paper liners.
- Whisk the flour, baking powder, salt, cinnamon, and optional nutmeg together in a medium bowl.
- In a separate bowl, whisk the melted, slightly cooled butter with the sugar, egg, vanilla, and milk until smooth.
- Add the dry ingredients to the wet ingredients and stir just until no dry flour remains. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full.
- Bake for 18 to 22 minutes, until the tops spring back lightly and a toothpick comes out clean or with a few moist crumbs.
- Cool the muffins for 5 minutes. Brush or dip each warm muffin in the melted coating butter.
