Easy Snickerdoodle Donut Muffins

  • 1 1/2 cups (190 g) All-purpose flour
  • 1 1/2 teaspoons Baking powder
  • 1/4 teaspoon Fine salt
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg, optional
  • 1/2 cup (113 g) Unsalted butter, melted and slightly cooled
  • 3/4 cup (150 g) Granulated sugar
  • 1 large Large egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup (120 ml) Whole or 2% milk
Snickerdoodle Coating
  • 1/4 cup (57 g) Unsalted butter, melted
  • 1/2 cup (100 g) Granulated sugar
  • 1 to 1 1/2 teaspoons Ground cinnamon

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 12-cup muffin pan or line it with paper liners.
  2. Whisk the flour, baking powder, salt, cinnamon, and optional nutmeg together in a medium bowl.
  3. In a separate bowl, whisk the melted, slightly cooled butter with the sugar, egg, vanilla, and milk until smooth.
  4. Add the dry ingredients to the wet ingredients and stir just until no dry flour remains. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full.
  6. Bake for 18 to 22 minutes, until the tops spring back lightly and a toothpick comes out clean or with a few moist crumbs.
  7. Cool the muffins for 5 minutes. Brush or dip each warm muffin in the melted coating butter.
  8. Combine the coating sugar and cinnamon, then roll each buttered muffin in the mixture. Serve warm or at room temperature.

Notes

Let melted butter cool slightly before adding the egg, and mix the batter only until combined. Coat the muffins while warm so the butter adheres well and the cinnamon sugar forms a fragrant shell. For a less rich finish, brush the tops only instead of dipping the entire muffin.
