Easy Smothered Baked Chicken Burritos

Flour tortillas are filled with seasoned chicken, refried beans, rice, salsa, green chiles, and cheese, then baked under a creamy green chile sauce. This family-style dinner makes eight satisfying burritos.

Ingredients
  

Filling
  • 3 cups Cooked shredded chicken
  • 1 15–16-ounce can Refried beans
  • 1 cup Cooked white or Mexican-style rice
  • 1/2 cup Salsa
  • 1 4-ounce can Diced green chiles
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Salt
  • 1 cup Shredded Mexican-blend or Monterey Jack cheese
Burritos and Sauce
  • 8 10-inch tortillas Large flour tortillas
  • 1 10 1/2-ounce can Condensed cream of chicken soup
  • 1 10-ounce can Green enchilada sauce
  • 1 cup Sour cream
  • 1 1/2 cups Shredded Mexican-blend, Monterey Jack, or cheddar cheese
Optional Garnishes
  • As desired Chopped cilantro, sliced green onions, diced tomato, avocado, additional sour cream, or salsa

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Combine the shredded chicken, refried beans, cooked rice, salsa, green chiles, cumin, chili powder, salt, and 1 cup shredded cheese in a large bowl.
  3. Whisk the condensed cream of chicken soup, green enchilada sauce, and sour cream in a separate bowl until smooth.
  4. Warm the tortillas briefly in the microwave under a damp paper towel so they become flexible and easier to roll.
  5. Place approximately 1 to 1 1/4 cups of filling down the center of each tortilla. Fold in the sides, roll tightly, and arrange the burritos seam-side down in the prepared baking dish.
  6. Pour the sauce evenly over the burritos, covering the tortillas completely, then sprinkle the remaining 1 1/2 cups cheese over the top.
  7. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 5 to 10 minutes, until the cheese is melted and the sauce is bubbling.
  8. Let the casserole rest for 5 minutes before serving, then add the garnishes you prefer.

Notes

Rotisserie chicken is a convenient shortcut; about half of a large rotisserie chicken usually supplies 3 cups. If using freshly cooked chicken, make sure the center of the finished casserole reaches 165°F. Keep the dish covered for most of baking so the tortillas stay soft.
