- Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
- Combine the shredded chicken, refried beans, cooked rice, salsa, green chiles, cumin, chili powder, salt, and 1 cup shredded cheese in a large bowl.
- Whisk the condensed cream of chicken soup, green enchilada sauce, and sour cream in a separate bowl until smooth.
- Warm the tortillas briefly in the microwave under a damp paper towel so they become flexible and easier to roll.
- Place approximately 1 to 1 1/4 cups of filling down the center of each tortilla. Fold in the sides, roll tightly, and arrange the burritos seam-side down in the prepared baking dish.
- Pour the sauce evenly over the burritos, covering the tortillas completely, then sprinkle the remaining 1 1/2 cups cheese over the top.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 5 to 10 minutes, until the cheese is melted and the sauce is bubbling.
- Let the casserole rest for 5 minutes before serving, then add the garnishes you prefer.
Notes
Rotisserie chicken is a convenient shortcut; about half of a large rotisserie chicken usually supplies 3 cups. If using freshly cooked chicken, make sure the center of the finished casserole reaches 165°F. Keep the dish covered for most of baking so the tortillas stay soft.
