- Line a baking sheet with parchment paper or wax paper. For easier assembly, chill the lined sheet briefly before beginning.
- Let the vanilla ice cream stand at room temperature for approximately 5 to 10 minutes, just until it is scoopable but not melted.
- Place 8 graham cracker squares on the prepared baking sheet. Add approximately 1/2 cup of softened ice cream to each square and press or spread it into an even layer.
- Sprinkle the ice cream evenly with the miniature marshmallows and semisweet mini chocolate chips.
- Top each ice cream portion with one of the remaining graham cracker squares. Press gently to form neat sandwiches without crushing the crackers.
- Freeze the sandwiches for at least 1 hour, preferably closer to 2 hours, or until the ice cream is completely firm. Serve directly from the freezer, allowing 2 to 3 minutes at room temperature if the graham crackers feel too hard.
Notes
Work quickly because softened ice cream melts rapidly. Wrap individual sandwiches in plastic wrap or store them in an airtight container. For a softer, more even filling, replace the miniature marshmallows with about 1 cup marshmallow creme or marshmallow fluff. Chocolate ice cream may be used instead of vanilla.
