Easy Slow Cooker Turkey Chili

A cozy crockpot turkey chili made with ground turkey, beans, corn, tomatoes, and classic chili spices. It serves 6–8 and can be cooked on Low or High for a flexible weeknight meal.

Ingredients
  

Turkey and Vegetables
  • 1 1/2 pounds Ground turkey
  • 1 medium Medium yellow onion, chopped
  • 1 pepper Green bell pepper, chopped
  • 2–3 cloves Garlic, minced
Tomatoes, Beans, and Corn
  • 2 14.5-ounce cans Diced tomatoes, undrained
  • 1 15-ounce can Tomato sauce
  • 1 15-ounce can Kidney beans, drained and rinsed
  • 1 15-ounce can Black beans, drained and rinsed
  • 1 can or 1 1/2 15-ounce can or cups Corn, drained, or frozen corn
Seasonings
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 plus more teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Cayenne pepper, optional
Optional Liquid
  • 1/2 cup Chicken broth or water

Method
 

Step-by-Step
  1. Heat a large skillet over medium heat. Add the ground turkey and cook for 5–7 minutes, breaking it into small pieces, until it is no longer pink.
  2. Add the chopped onion, green bell pepper, and minced garlic to the skillet. Cook for 3–4 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Transfer the cooked turkey and vegetables to a 5- to 6-quart slow cooker.
  4. Add the undrained diced tomatoes, tomato sauce, drained and rinsed kidney beans, drained and rinsed black beans, corn, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne if using.
  5. Stir well to combine. Add the chicken broth or water only if the chili appears too thick.
  6. Cover and cook on Low for 6–8 hours or High for 3–4 hours.
  7. Stir before serving and adjust the salt or chili seasoning. Let the chili rest for 10–15 minutes for a slightly thicker consistency, then add your favorite toppings.

Notes

Brown the turkey before placing it in the slow cooker for better flavor, improved texture, and less excess liquid. For thicker chili, omit the broth or water and keep the diced tomatoes undrained. Serve with shredded cheese, sour cream, chopped green onion, cilantro, avocado, or tortilla chips.
