  • 1 medium head, about 2 to 2 1/2 pounds Green cabbage, cored and cut into 1-inch pieces
  • 1 pound Smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 medium Yellow onion, chopped
  • 1 cup Chicken broth
  • 2 cloves Garlic, minced
Seasonings
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Caraway seeds, optional
Optional Finish
  • 1 tablespoon Butter

Method
 

Step-by-Step
  1. Core the cabbage and cut it into bite-size, roughly 1-inch pieces. Chop the onion, mince the garlic, and slice the smoked sausage into 1/2-inch rounds.
  2. Place about half of the cabbage in a 5- to 6-quart slow cooker. Add the chopped onion, minced garlic, sliced sausage, salt, pepper, and caraway seeds if using.
  3. Pile the remaining cabbage on top and pour in the chicken broth. Dot the surface with the optional tablespoon of butter, then cover the slow cooker.
  4. Cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the cabbage is tender and the fully cooked sausage is heated through. Stir before serving and adjust the salt and pepper to taste.

Notes

Browning the sliced sausage first is optional but improves its color and savory flavor. Do not add excessive liquid because cabbage releases moisture while cooking. For a variation, add 1 to 1 1/2 pounds baby potatoes or a 14-ounce can of diced tomatoes.
