- Trim excess fat from the chicken thighs if using them, then place the chicken in the slow cooker.
- Stir together the reserved pineapple juice, brown sugar, low-sodium soy sauce, and minced garlic if using. Pour the sauce over the chicken.
- Add the pineapple chunks, sliced bell pepper, and sliced onion if using. Cover the slow cooker.
- Cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours, until the chicken reaches 165°F internally and is tender.
- Serve the chicken whole, sliced, or shredded with the pineapple and sauce. Spoon the sauce over rice and finish with green onions or sesame seeds.
Notes
Choose pineapple packed in juice rather than heavy syrup to prevent an overly sweet sauce. For firmer pineapple, add the fruit during the final 30 to 60 minutes. Do not substantially overcook boneless chicken because it can become dry. For a thicker sauce, simmer the cooking liquid in a saucepan or whisk 1 tablespoon cornstarch with 2 tablespoons cold water, stir it into the liquid, and simmer until thickened.
