Easy Slow Cooker Peanut Clusters

Crunchy roasted peanuts are coated in smooth almond bark, semi-sweet chocolate, and milk chocolate for an easy crockpot candy recipe. The batch makes approximately 50 to 60 clusters.

  • 16 ounces Salted dry-roasted peanuts
  • 16 ounces Unsalted dry-roasted peanuts
  • 2 pounds Vanilla-flavored almond bark or white candy coating, broken into pieces
  • 12 ounces Semi-sweet chocolate chips
  • 12 ounces Milk chocolate chips

Method
 

Step-by-Step
  1. Line baking sheets with parchment paper or wax paper. Add the salted and unsalted peanuts to the slow cooker, then layer the broken almond bark, semi-sweet chocolate chips, and milk chocolate chips over the top without stirring.
  2. Cover the slow cooker and cook on LOW for about 1 hour. Keep the lid in place to retain heat, but check the mixture around the one-hour mark because slow cookers can vary.
  3. Stir thoroughly, scraping around the sides and bottom so the melting coatings combine with the peanuts. Continue cooking on LOW for another 30 to 60 minutes, stirring occasionally, until the coating is smooth and fully melted.
  4. Use a tablespoon or small cookie scoop to drop portions onto the prepared parchment. Leave a little space between each cluster so the pieces remain separate as they cool.
  5. Let the clusters cool and set completely at room temperature for 30 to 60 minutes, or refrigerate them for about 20 to 30 minutes. Transfer the firm candy to an airtight container for storage.

Notes

Use LOW heat only because chocolate and almond bark can scorch or become grainy on HIGH. Avoid letting water or condensation drip into the chocolate. Store in an airtight container at cool room temperature for about 1 to 2 weeks, or refrigerate for a firmer texture.
