Easy Slow Cooker Mushroom Barley Soup

A cozy crockpot soup made with pearl barley, mushrooms, vegetables, garlic, thyme, and vegetable broth. It cooks gently until the barley is tender and the vegetables are comforting and flavorful.

  • 1 cup Pearl barley, rinsed
  • 1 lb (450 g) Cremini or white mushrooms, sliced
  • 1 medium Medium yellow onion, diced
  • 2 medium Carrots, diced or sliced
  • 2 stalks Celery stalks, diced
  • 3-4 cloves Garlic, minced
  • 8 cups (1.9 L) Low-sodium vegetable broth or stock
Seasonings
  • 1 teaspoon Dried thyme
  • 2 leaves Bay leaves
  • 1 teaspoon Kosher salt, plus more to taste
  • ½ teaspoon Freshly ground black pepper
Optional Ingredients
  • 1 tablespoon Olive oil for sautéing
  • 1-2 teaspoons Soy sauce or Worcestershire sauce
Garnish
  • 2 tablespoons Fresh parsley, chopped

Method
 

Step-by-Step
  1. Rinse the pearl barley under cold water until the water runs mostly clear, then drain well. Clean the mushrooms, slice them, dice the onion, carrots, and celery, and mince the garlic.
  2. For deeper flavor, warm the olive oil in a skillet and sauté the onion, carrots, celery, garlic, and mushrooms for 5–8 minutes. This step is optional, but cooking the mushrooms first allows excess moisture to evaporate.
  3. Transfer the rinsed barley, vegetables, mushrooms, broth, thyme, bay leaves, salt, and pepper to the slow cooker. Stir thoroughly so the barley is distributed through the liquid.
  4. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours. The soup is ready when the pearl barley is tender and the vegetables are soft.
  5. Remove both bay leaves and taste the soup carefully. Adjust the salt and pepper, and stir in the optional soy sauce or Worcestershire sauce if you want an extra savory note.
  6. Stir in the chopped fresh parsley just before serving. Ladle the hot soup into bowls and serve immediately.

Notes

Pearl barley is recommended because it cooks reliably in a slow cooker; hulled barley requires substantially longer cooking. Barley continues absorbing broth after cooking, so reserve extra broth and stir it in when reheating leftovers.
