- Cut the cauliflower into evenly sized florets. Dice the onion and potato into pieces of similar size so the vegetables cook at the same rate.
- For deeper flavor, warm the butter or olive oil in a skillet and sauté the onion for 3 to 5 minutes. Add the garlic during the final 30 seconds, then transfer the mixture to the slow cooker.
- Add the cauliflower, potato, onion, garlic, broth, kosher salt, black pepper, dried thyme, and optional paprika or nutmeg to the slow cooker. The broth should come about halfway to two-thirds up the vegetables.
- Cover and cook on LOW for 5 to 7 hours or HIGH for 2 1/2 to 3 1/2 hours. The soup is ready when both the cauliflower and potato are completely tender.
- Blend the hot soup with an immersion blender until smooth. If using a countertop blender, work in batches, vent the lid, and hold a towel over the top to safely release steam.
- Stir in the cream or half-and-half after blending. If adding cheddar, place the slow cooker on LOW or WARM and add the cheese gradually, stirring until melted without allowing the soup to boil.
- Taste the soup and adjust the salt, pepper, and seasonings. Serve hot with cheese, croutons, chives, bacon, toasted seeds, or another favorite topping.
Notes
Potato naturally thickens the soup, while cream and cheddar provide extra richness. For a lighter version, omit the cream and use additional broth or a small amount of milk. Refrigerate leftovers promptly and reheat gently without boiling.
