Easy Skillet Lasagna

A cozy one-pan lasagna made with broken noodles, savory meat sauce, ricotta, mozzarella, and Parmesan. It is ready in about 30 to 35 minutes and serves 4 to 6.

Ingredients
  

Meat and Sauce
  • 1 tablespoon Olive oil
  • 1 pound Lean ground beef or Italian sausage
  • 1 small Small yellow onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 28 ounces Crushed tomatoes
  • 8 ounces Tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Pasta and Cheese
  • 8 ounces Uncooked lasagna noodles, broken into 2-inch pieces
  • 1 cup Ricotta cheese
  • 1 1/2 cups Shredded mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
  • 1/4 cup Water, if needed

Method
 

Step-by-Step
  1. Heat the olive oil in a large, deep skillet over medium-high heat. Add the ground beef or Italian sausage and diced onion, then cook for 5 to 7 minutes, breaking the meat into small pieces, until browned and the onion is softened.
  2. Add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant. Avoid browning the garlic, since it can become bitter.
  3. Stir in the crushed tomatoes, tomato sauce, Italian seasoning, kosher salt, and black pepper. Bring the mixture to a gentle simmer.
  4. Add the broken lasagna noodles and stir so they are mostly covered by the sauce. Cover the skillet and simmer for 12 to 15 minutes, stirring every few minutes, until the noodles are tender; add the water if the sauce becomes too thick before the pasta is ready.
  5. Dollop the ricotta over the cooked lasagna and gently fold it through, or leave it in soft spoonfuls throughout the skillet. Sprinkle on 1 cup of mozzarella and all of the Parmesan.
  6. Cover the skillet for 2 to 3 minutes, until the cheese melts. Add the remaining mozzarella if desired, then serve hot with fresh basil or parsley.

Notes

Break the noodles into uneven 2-inch pieces so they fit the skillet and cook evenly. Keep the skillet covered during the pasta simmer to trap steam, and stir periodically to prevent sticking. For a browned cheese topping, use a wide, deep oven-safe skillet and broil for 1 to 2 minutes, watching closely.
