Ingredients

Roll Dough
  • 1 packet (2 1/4 teaspoons or 7 g) Active dry yeast
  • 1/4 cup Warm water
  • 1/2 cup Butter, softened
  • 1/4 cup Granulated sugar
  • 1 egg Large egg
  • 1 teaspoon Salt
  • 1 cup Warm milk
  • 3 to 3 1/2 cups All-purpose flour
Finishing
  • As needed for brushing Melted butter

Method

Step-by-Step
  1. Dissolve the yeast in warm water and let it stand for 5 to 10 minutes, until foamy. Beat softened butter and sugar together, then mix in the egg, salt, warm milk, and activated yeast.
  2. Gradually mix in 3 cups of flour to make a soft dough. Add enough of the remaining flour to make the dough manageable while keeping it slightly soft and tacky.
  3. Knead the dough for 6 to 8 minutes by hand or with a dough hook, until smooth and elastic. Place it in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour, until doubled.
  4. Divide the dough into 12 equal pieces and shape each piece into a ball. Arrange the balls in a greased 10-inch cast-iron skillet, cover, and let them rise for 30 to 45 minutes, until puffy.
  5. Bake at 375°F (190°C) for 15 to 20 minutes, until lightly browned. Brush the hot rolls with melted butter before serving.

Notes

Keep the milk and butter warm rather than hot because liquid above roughly 120°F (49°C) can weaken or kill the yeast. Avoid adding too much flour, since a soft, slightly tacky dough makes more tender rolls. For especially tender tops, brush the baked rolls with melted butter and cover them loosely with a clean towel for a few minutes.
