This small-batch recipe makes one large, soft and chewy chocolate chip cookie with crisp edges and a warm, gooey center. It is ready with about 5 minutes of preparation, plus optional chilling.

Cookie Dough
  • 1 tablespoon (14 g) Unsalted butter, melted
  • 1 tablespoon (12-13 g) Granulated sugar
  • 1 tablespoon (12-13 g) Packed light brown sugar
  • 1 yolk (about 18 g) Large egg yolk
  • 1/4 teaspoon Vanilla extract
  • 1/4 cup (30-32 g) All-purpose flour
  • 1/8 teaspoon Baking soda
  • 1/16 teaspoon, or a small pinch Salt
  • 2 tablespoons (20-25 g) Semisweet chocolate chips

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  2. Melt the butter and let it cool briefly until it is warm rather than hot.
  3. Stir the melted butter, granulated sugar, and packed light brown sugar together.
  4. Mix in the egg yolk and vanilla extract until the mixture looks smooth.
  5. Add the flour, baking soda, and salt. Stir just until no dry flour remains.
  6. Fold in the semisweet chocolate chips.
  7. Shape the dough into one thick mound on the prepared baking sheet. Chill for 10 to 15 minutes if the dough is very soft or if you prefer a thicker cookie.
  8. Bake for 10 to 12 minutes, until the edges are set and lightly golden while the center still looks slightly soft.
  9. Cool the cookie on the baking sheet for 5 to 10 minutes before eating. It will firm as it cools.

Notes

Use only the egg yolk, not the whole egg, because a whole egg adds too much liquid to this small amount of dough. For less spreading, cool the melted butter fully and chill the shaped dough before baking. Remove the cookie while the center is still slightly underbaked so residual heat can finish cooking it.
