- Heat the oven to 400°F and line a baking sheet with parchment paper.
- Pat the cooked shrimp very dry with paper towels. Chop larger shrimp into small, bite-size pieces.
- Toss the shrimp with the lime juice, chili powder, ground cumin, and salt.
- Arrange the 24 scoop-style tortilla chips in a single layer on the prepared baking sheet.
- Fill each chip with a small amount of black beans, corn, salsa, and seasoned shrimp, then sprinkle the shredded cheese over the bites.
- Bake for 5–7 minutes, just until the cheese melts and the chips are warm. Top with sour cream, avocado, jalapeño, and cilantro, then serve immediately.
Notes
Drain the salsa, black beans, and corn thoroughly, and dry the shrimp well to help prevent soggy chips. Add cool toppings after baking. If using raw shrimp, sauté it separately until opaque before assembling the nacho bites.
