Easy Shrimp Nacho Bites Recipe

Scoop-style tortilla chips are filled with seasoned cooked shrimp, black beans, corn, salsa, and cheese, then baked until warm and melty. Fresh avocado, sour cream, cilantro, and jalapeño add the perfect finishing touch.

  • 24 chips Scoop-style tortilla chips
  • 8 ounces Cooked shrimp, peeled, deveined, tails removed, and chopped
  • 1/2 cup Canned black beans, drained and rinsed
  • 1/2 cup Corn kernels, drained if canned
  • 1/2 cup Prepared salsa, preferably thick and well drained
  • 1 cup Shredded Mexican cheese blend, Monterey Jack, or cheddar-Jack
Toppings and Seasoning
  • 1/4 cup Sour cream
  • 1 small Small avocado, diced
  • 1 small Small jalapeño, thinly sliced, optional
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Fresh lime juice
  • 1/4 teaspoon Chili powder
  • 1/4 teaspoon Ground cumin
  • 1/4 teaspoon Salt

Method
 

Step-by-Step
  1. Heat the oven to 400°F and line a baking sheet with parchment paper.
  2. Pat the cooked shrimp very dry with paper towels. Chop larger shrimp into small, bite-size pieces.
  3. Toss the shrimp with the lime juice, chili powder, ground cumin, and salt.
  4. Arrange the 24 scoop-style tortilla chips in a single layer on the prepared baking sheet.
  5. Fill each chip with a small amount of black beans, corn, salsa, and seasoned shrimp, then sprinkle the shredded cheese over the bites.
  6. Bake for 5–7 minutes, just until the cheese melts and the chips are warm. Top with sour cream, avocado, jalapeño, and cilantro, then serve immediately.

Notes

Drain the salsa, black beans, and corn thoroughly, and dry the shrimp well to help prevent soggy chips. Add cool toppings after baking. If using raw shrimp, sauté it separately until opaque before assembling the nacho bites.
