Easy Sheet Pan Shrimp Fajitas

Ingredients
  

Shrimp and Vegetables
  • 1 1/2 pounds Large shrimp, peeled and deveined; tails may be left on
  • 3 bell peppers Bell peppers, thinly sliced
  • 1 medium onion Medium red onion, thinly sliced
  • 3 tablespoons Olive oil, divided
Seasoning
  • 2 tablespoons Fresh lime juice
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked or sweet paprika
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Dried oregano
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
For Serving
  • 8 tortillas Small flour or corn tortillas, warmed
  • As desired Lime wedges and optional toppings

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment or foil if desired.
  2. Pat the shrimp thoroughly dry. Toss them with 1 tablespoon olive oil, lime juice, chili powder, cumin, paprika, garlic powder, oregano, kosher salt, and black pepper.
  3. Toss the sliced bell peppers and red onion with the remaining 2 tablespoons olive oil and a small pinch of salt. Spread the vegetables in a single layer on the sheet pan.
  4. Roast the vegetables for 8 to 10 minutes, until they begin to soften.
  5. Remove the pan from the oven and add the seasoned shrimp. Toss gently or arrange everything into an even layer with space between the pieces.
  6. Return the pan to the oven for 5 to 7 minutes, depending on shrimp size. Remove it as soon as the shrimp are opaque, pink, and loosely curled into a C shape, then serve immediately in warm tortillas with lime wedges and toppings.

Notes

Dry shrimp well so they roast instead of steam. Avoid crowding the pan, and do not overcook the shrimp; a tightly curled O shape usually means they have cooked too long. Refrigerate leftovers in an airtight container and reheat gently.
