Easy Sausage and Potatoes Casserole

Smoked sausage, roasted potatoes, onion, and bell pepper come together in a simple one-pan dinner finished with optional melted cheddar cheese. It serves 4–6 and takes about 1 hour from start to finish.

  • 1 pound Smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 1/2 pounds Yukon Gold or russet potatoes, cut into 1-inch cubes
  • 1 medium Medium yellow onion, cut into chunks
  • 1 bell pepper Bell pepper, sliced or cut into chunks
Seasoning
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Kosher salt, plus more to taste
  • 1/4 teaspoon Black pepper
Optional Topping
  • 1 cup Shredded cheddar cheese

Method
 

Step-by-Step
  1. Heat the oven to 425°F and lightly grease a 9-by-13-inch casserole dish or rimmed baking sheet.
  2. Add the cubed potatoes, onion, and bell pepper to the prepared dish. Drizzle with olive oil, then add the minced garlic, Italian seasoning, paprika, kosher salt, and black pepper; toss thoroughly to coat.
  3. Roast the vegetables for 25–30 minutes, stirring once, until the potatoes are beginning to soften.
  4. Add the sliced smoked sausage or kielbasa and toss it with the roasted vegetables.
  5. Continue baking for 15–20 minutes, until the potatoes are tender and the sausage is hot and lightly browned.
  6. Sprinkle the cheddar cheese over the casserole, if using. Return the dish to the oven for 3–5 minutes, until the cheese is melted.

Notes

Cut the potatoes into evenly sized 1-inch pieces and spread the ingredients in a single layer for better browning. Fully cooked smoked sausage, kielbasa, or andouille may be used. If substituting Italian sausage, cook it to an internal temperature of 160°F.
