- Heat the oven to 425°F and lightly grease a 9-by-13-inch casserole dish or rimmed baking sheet.
- Add the cubed potatoes, onion, and bell pepper to the prepared dish. Drizzle with olive oil, then add the minced garlic, Italian seasoning, paprika, kosher salt, and black pepper; toss thoroughly to coat.
- Roast the vegetables for 25–30 minutes, stirring once, until the potatoes are beginning to soften.
- Add the sliced smoked sausage or kielbasa and toss it with the roasted vegetables.
- Continue baking for 15–20 minutes, until the potatoes are tender and the sausage is hot and lightly browned.
- Sprinkle the cheddar cheese over the casserole, if using. Return the dish to the oven for 3–5 minutes, until the cheese is melted.
Notes
Cut the potatoes into evenly sized 1-inch pieces and spread the ingredients in a single layer for better browning. Fully cooked smoked sausage, kielbasa, or andouille may be used. If substituting Italian sausage, cook it to an internal temperature of 160°F.
