  • 1 pound Fully cooked smoked sausage or kielbasa, sliced into 1/4-inch rounds
  • 1 tablespoon Olive oil
  • 1 medium Medium yellow onion, sliced or diced
  • 3 cloves Garlic, minced
  • 1 head, about 2 pounds Small green cabbage, cored and chopped
  • 1/2 cup Chicken broth or water
Seasonings
  • 1 teaspoon Smoked paprika or sweet paprika
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Black pepper
Optional Finish
  • 1 tablespoon Apple cider vinegar

Step-by-Step
  1. Slice the sausage and onion. Remove the tough core from the cabbage, then chop the leaves into bite-size pieces.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and cook for 4 to 6 minutes, turning occasionally, until browned on both sides; transfer it to a plate if the pan feels crowded.
  3. Add the onion to the skillet and cook for 3 to 4 minutes, until softened. Stir in the garlic and paprika and cook for about 30 seconds, just until fragrant.
  4. Add the chopped cabbage, chicken broth or water, kosher salt, and black pepper. Toss well so the cabbage is coated with the seasoned oil and the browned bits from the skillet are loosened.
  5. Cover the skillet and cook for 8 to 12 minutes, stirring once or twice, until the cabbage is tender but still has some texture.
  6. Return the browned sausage to the skillet and cook uncovered for 2 to 3 minutes. Stir in the apple cider vinegar, if using, taste, and adjust the seasoning before serving.

Notes

Brown the sausage first for the best flavor. Keep the cabbage slightly textured rather than cooking it until mushy. Refrigerate leftovers in a covered container and reheat gently in a skillet or microwave.
