- Rinse and dry the tomatoes, jalapeno, cilantro, and lime. Core the tomatoes, then finely chop them, removing some seeds and watery pulp if you prefer a thicker salsa.
- Finely dice the onion, mince the jalapeno and garlic, and chop the cilantro. Keeping the pieces similar in size helps every spoonful have a balanced mixture of ingredients.
- Place the tomatoes, onion, jalapeno, cilantro, garlic, lime juice, and kosher salt in a mixing bowl. Add the optional cumin or minced serrano if desired.
- Stir gently until the ingredients are evenly combined without crushing the tomatoes. Taste and adjust the salt, lime juice, or chile heat.
- Serve immediately, or cover and refrigerate for 15 to 30 minutes to allow the flavors to blend. Stir once before serving and taste again because the tomatoes may release additional liquid.
Notes
For the best texture, use firm Roma tomatoes and remove excess seeds and pulp. Fresh lime juice and fresh cilantro provide the brightest flavor. Refrigerate covered and use within 2 to 3 days; the salsa will become increasingly watery as the tomatoes release juice.
