- Drain the salmon thoroughly. Remove the skin and any large bones if desired; the small soft bones are edible, but removing them creates a smoother texture.
- Place the salmon in a mixing bowl and flake it well with a fork.
- Add the egg, minced onion, breadcrumbs, mayonnaise, lemon juice, parsley, garlic powder, salt, and black pepper. Mix until the ingredients are evenly combined.
- Shape the mixture into 6 evenly sized patties, about 1/2 inch thick.
- For firmer patties, refrigerate the shaped patties for 10–15 minutes before frying.
- Heat the oil in a large skillet over medium heat.
- Fry the patties for approximately 4–5 minutes per side, turning them once, until golden brown, crisp, and heated through.
- Transfer the cooked patties briefly to paper towels to drain, then serve immediately with lemon wedges and your favorite sauce.
Notes
Drain the salmon well so the mixture does not become soft. Chilling the formed patties for 10–15 minutes and waiting until the first side is well browned before turning helps prevent breakage and creates a crisp crust. Fresh parsley can be replaced with 1/2 teaspoon dried parsley.
