Method
Step-by-Step
- Combine the ground beef, breadcrumbs, egg, minced onion, ketchup, Worcestershire sauce, mustard, garlic powder, kosher salt, and black pepper in a bowl. Mix just until the ingredients are combined, taking care not to overwork the meat.
- Divide the mixture into four portions and shape each portion into an oval patty about 1/2 to 3/4 inch thick. If the patties feel soft, chill them for 10 to 15 minutes before cooking.
- Heat a large skillet over medium-high heat and add a small amount of oil if needed. Sear the patties for about 3 to 4 minutes per side, until browned, then transfer them to a plate.
- Reduce the heat to medium and add the butter. Cook the sliced mushrooms and onion for 5 to 7 minutes, stirring occasionally, until softened and lightly browned.
- Sprinkle the flour over the vegetables and cook for 1 minute while stirring continuously. Gradually whisk in the beef broth, scraping up browned bits from the skillet.
- Stir in the Worcestershire sauce, ketchup, and optional Dijon mustard. Bring the gravy to a gentle simmer.
- Return the patties and any collected juices to the skillet. Cover loosely and simmer for 10 to 12 minutes, turning the patties once, until they are cooked through and the gravy has thickened.
- Season the gravy with additional salt and pepper to taste. Serve the Salisbury steak with mashed potatoes, egg noodles, or rice.
Notes
Use an instant-read thermometer to confirm that the patties reach 160°F (71°C). For smooth gravy, add the broth gradually while whisking. Refrigerate leftovers in a covered container and reheat gently with a splash of broth if needed.
