- Preheat the oven to 425°F. Rinse the sugar snap peas, pat them completely dry, remove the stem ends, and pull away any fibrous strings that remain attached.
- Place the prepared peas in a bowl and toss with the olive oil, kosher salt, freshly ground black pepper, and optional minced garlic or garlic powder.
- Spread the peas in a single layer on a large rimmed baking sheet, leaving space between the pods so hot air can circulate.
- Roast for 10–12 minutes, stirring or shaking the pan once halfway through, until the peas are bright green with lightly browned, blistered spots.
- Remove from the oven and finish with fresh lemon juice or grated lemon zest, if desired. Serve immediately while the peas are warm and crisp-tender.
Notes
Drying the peas thoroughly and avoiding a crowded pan are the keys to browning instead of steaming. For a 450°F oven, begin checking after about 8–10 minutes because the peas will brown more quickly.
