  • 1 small Small yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 1 cup Uncooked long-grain white rice
  • 1 14.5-ounce can Diced tomatoes with juices
  • 2 cups Beef broth
Seasonings
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Optional Additions
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped
  • 1/2 cup Shredded cheddar cheese

Method
 

Step-by-Step
  1. Heat a large, deep skillet over medium-high heat. Add the ground beef and cook for 5 to 7 minutes, breaking it into small crumbles, until browned; drain excess fat if needed.
  2. Add the diced onion to the skillet and cook for 3 to 4 minutes, stirring occasionally, until softened. Add the minced garlic and cook for about 30 seconds, just until fragrant.
  3. Stir in the uncooked rice, diced tomatoes with their juices, beef broth, Italian seasoning, paprika, salt, and black pepper. Mix well so the rice is distributed through the beef and liquid.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 18 to 22 minutes, stirring once or twice to help prevent sticking, until the rice is tender and most of the liquid is absorbed.
  5. Stir in the frozen peas during the final 3 to 5 minutes of cooking, if using. Replace the lid and let them heat through while the rice finishes.
  6. Remove the skillet from the heat and let it stand covered for 5 minutes. Fluff the rice gently with a fork, then top with parsley and optional cheddar; cover briefly until the cheese melts.

Notes

For separate, fluffy grains, rinse the rice before adding it; leave it unrinsed for a thicker, more cohesive texture. Keep the skillet covered while the rice cooks. If the rice is tender but the mixture is watery, simmer uncovered for 2 to 4 minutes. If the rice is dry before it is cooked, add 1/4 cup broth or water and continue simmering.
