- Heat the oven to 350°F (175°C) and grease a 13 × 9-inch baking dish. Spread the chopped rhubarb evenly across the bottom.
- Sprinkle the sugar evenly over the rhubarb, then distribute the dry strawberry gelatin over the sugar. Do not stir the layers together.
- Sprinkle the dry yellow cake mix evenly over the fruit and gelatin. Pour the water across the surface, then drizzle the melted butter over the cake mix as evenly as possible.
- Bake for 45–50 minutes, until the top is golden brown and the rhubarb filling bubbles around the edges. Cool briefly before serving warm.
Notes
Thaw frozen rhubarb and drain excess liquid before using so the dessert does not become overly watery. Keep the layers undisturbed, and distribute the water and butter carefully to reduce pockets of dry cake mix.
