- Heat the oven to 350°F and lightly grease a 9 x 13-inch baking dish with cooking spray or butter.
- Spread the chopped rhubarb evenly across the bottom of the prepared dish. Sprinkle the sugar over the rhubarb, followed by the dry strawberry gelatin.
- Sprinkle the dry cake mix evenly over the fruit and gelatin. Do not prepare the cake mix according to the box directions, and do not stir the layers.
- Pour the water evenly over the cake mix, then drizzle the melted butter across the surface or distribute thin butter slices as evenly as possible.
- Bake for 45 to 60 minutes, until the top is golden brown and the rhubarb filling is bubbling around the edges. Rest the cake for at least 10 to 15 minutes before serving.
Notes
Do not stir the layers. The rhubarb releases moisture as it bakes, creating the sauce while the cake mix forms the topping. If using frozen rhubarb, thaw and drain it first. Never use rhubarb leaves, which are toxic. Serve warm with vanilla ice cream or whipped cream.
