A no-bake patriotic pie with a graham-cracker crust, sweetened cream cheese filling, whipped topping, strawberries, and blueberries. Chill it thoroughly for a firm, creamy slice.

Crust and Filling
  • 1 9-inch crust Prepared graham-cracker crust
  • 8 ounces Cream cheese, softened
  • 1/3 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped topping, thawed, or sweetened whipped cream
Fruit Topping
  • 1 cup Fresh strawberries, sliced
  • 1 cup Fresh blueberries
  • 1/4 cup Strawberry preserves or seedless strawberry jam, optional
For Serving
  • As needed Whipped cream, optional

Method
 

Step-by-Step
  1. Let the cream cheese soften fully. Beat it with the granulated sugar and vanilla extract until the mixture is smooth and creamy.
  2. Fold in the thawed whipped topping or sweetened whipped cream until evenly combined, taking care not to deflate the mixture more than necessary.
  3. Spread the cream-cheese filling into the prepared 9-inch graham-cracker crust. Smooth the top with a spatula so the fruit has an even surface.
  4. Arrange the sliced strawberries over one section of the pie and the blueberries over the remaining section, or scatter both fruits evenly for a relaxed presentation.
  5. If desired, warm the strawberry preserves briefly and brush them over the strawberries for shine and extra berry flavor.
  6. Refrigerate the pie until the filling is firm, at least 2 hours, although overnight is preferable. Slice cold and serve with additional whipped cream if desired.

Notes

Pat berries dry before decorating so excess moisture does not soften the filling or make the crust soggy. For clean slices, dip a thin knife in hot water, wipe it dry, and repeat between cuts.
