- Pat the chicken dry, then rub it with olive oil, kosher salt, black pepper, garlic powder, and paprika.
- Heat a skillet over medium heat. Cook the chicken for approximately 5 to 7 minutes per side, depending on thickness, until the thickest part reaches 165°F/74°C.
- Transfer the chicken to a cutting board and let it rest for 5 minutes. Slice or dice it once the juices have redistributed.
- Divide the chopped romaine or mixed greens among four bowls. Arrange the tomatoes, cucumber, corn, avocado, red onion, cheddar, and bacon over the greens.
- Add the sliced chicken to each bowl. Drizzle with ranch dressing, garnish with fresh chives or parsley, and serve immediately.
Notes
